Here is how you make Pina Colada Coconut Flounder:

Preheat oven to 400 degrees.Mix panko breadcrumbs, salt, pepper and flaked coconut in a flat bowl.Add a few drops of water to the frozen drink mix to thin it. With a pastry brush, coat both sides of each fillet. Dredge the fillets in the panko/coconut mixture , coating both sides.Cover a baking tray with parchment paper, spray with a small amount of cooking spray and bake the fillets for about 15 - 20 minutes or until crispy and golden.
