6 eggs, beaten
1/2 c small curd cottage cheese 1% milk fat
1/2 cup nonfat evap. milk
1 c Low fat Monterey jack, shredded
1 c low fat cheddar, shredded
1 can chopped green chilies
1 lb. ground turkey/turkey sausage


How Do I Make Corn Tortilla Quiche?

Here is how you make Corn Tortilla Quiche:

Spray 9 in pie plate with cooking spray. Arrange tortillas in the bottom so that they overlap and extend about 1/2 inch over the edge of the pie plate. Lay the fifth tortilla over the center. Brown the ground turkey or turkey sausage and drain well. Place sausage, green chilies and shredded cheeses on top of the tortilla crust. In a bowl, mix eggs, evap. milk, cottage cheese. Season with chili powder if desired. Pour the egg mixture over ingredients in crust. Bake at 375 for 45 minutes or until golden brown and puffy. Cut into wedges and serve. Makes 8 wedges.* I try to make this as low fat as possible so I use all low fat cheeses. You can omit the chilies if you wish and add broccoli or other vegetables as you choose.
