Here is how you make Jambalaya in the Crock Pot:

Cut chicken into 1 inch pieces and add to crockpot. (or put individual frozen chicken breasts in crockpot and break up into smaller pieces just before adding rice.)For added flavor saute veggies in a little oil (I prefer garlic flavored grapeseed oil) until slightly browned, then add to chicken in crockpot. Then add the other ingredients except the rice.
