Here is how you make Curried Tilapia:

Heat oil in heavy based saucepan large enough to hold the fish flat. Fry the onions in the oil until translucent (not brown). Add the curry powder and fry for a further minute or 2 (careful not to burn the spices). Add the tomatoes and turn the heat to medium. As the tomatoes start making sauce, add the fish and a little fish stock or water to cover. Cover and simmer for about 15 minutes or until the fish is cooked through.
