3/4 cup pinto beans, rinsed + drained
1/8 tsp black pepper
4 high fiber, low carb tortillas
1/2 cup reduced fat mexican blend cheese

Here is how you make Easy Enchiladas:

Preheat oven to 350 degrees. Spray a casserole dish with nonsitck cooking spray. In a large skillet, heat the oil. Saute the sausage, bell pepper and onion, stirring frequently to break up the sausage, until browned; about 6-8 minutes. Add the chili powder and cumin; cook, stiring for 1 minutes. Add tomatoes, beans and black pepper. Reduce the heat and simmer for 5 minutes.Please the tortillas on a work surface; spoon the sausage mixture down the center of the tortillas then roll them into cylinders.
