2 Tbs chicken broth
1 medium onion, chopped
1/2 green (bell) pepper, diced
1/2 sweet red pepper, diced
1/2 c canned black beans, rinsed & drained
1/2 c frozen sweet corn
2 c cooked turkey breast meat, shredded
1 c enchilada sauce, divided
1 tsp ground cumin
crushed red pepper flakes (optional)
1 c reduced fat cheddar cheese, divided
6 - 8 La Tortilla Factory Lo Carb tortillas
pickled jalapeno pepper rings, optional


How Do I Make Fast and Easy Enchiladas?

Here is how you make Fast and Easy Enchiladas:

Spray a large skillet with nonstick spray and saute' the onion and green and red peppers over medium-high heat about 3 minutes, adding chicken broth as needed to prevent sticking. Remove 1/4 c from skillet and set aside. Reduce heat to medium and add beans, corn, turkey, 1/2 c enchilada sauce, cumin, and pepper flakes (if using). Simmer, stirring occasionally, until heated through. Remove from heat and stir in 1/2 c of the shredded cheese. Heat tortillas in microwave according to package directions. Place about 1/3 c turkey mixture off-center of each tortilla and roll tightly. Place seam-side down in microwave safe casserole dish. Cover and microwave at 70% power for 5 - 6 minutes. Spread with remaining 1/2 c enchilada sauce, remaining 1/2 c cheddar, reserved onions & peppers, and jalapenos (if using). Cover and microwave on HIGH for 3 - 4 minutes or until hot.
