Here is how you make Veg burrito w chick pea and egg plant:

Makes for 4 servings (1.5 each)Cut up the veg, add all except the aubergine to a deep frying pan already glazed with the oil with the heat on high. Mix in the garlic and heat through with the heat lower to medium or low level depending on how hot your stove burns. Add any chili (red or green OPTIONALLY) depending on how hot you want it. I may add one including the seeds. Heat oven to about 320 F. Wash the chick peas several times prior to using. I just add water from the tap to the can, shake a bit and then drain, repeat a few times. Mix in the chick peas after stirring the veggies. Add aubergine, and add a little water (about a quarter cup). Stir and cook for 5-7 minute. Add chili powder and cumin, add salt and pepper to taste. Mix and let cook another couple minutes.Get the flour tortillas ready. Add a heaping serving spoon full to the tortilla. You will need to portion the serving size so as to make 6 servings. You may want to divide by eyeballing like you would a pie prior to filling the tortilla. Add a little cheese and cilantro and fold all over like a burrito and put into a pan.
