Preheat oven to 350. Heat a 10-1/2 inch cast iron skillet (measured across the top not bottom), over medium low heat with 2 tablespoons of olive oil, and 2 tablespoons of butter. Make sure the olive oil moistens the side of the pan. Heat until the butter and olive oil is bubbly.Meanwhile put the eggs, cumin, salt, 2 tablespoons water, pepper, and oregano in a bowl and beat well with a whisk or a mixer. Switch oven to broil and broil for a minute or rwo until top is bubbly and cheese and sauce are golden in spots.
