1 Eggplant, peeled then cubed
20oz Portabella Mushrooms sliced
1 can Del Monte Diced Tomato with Jalapeno
3 cloves Garlic, minced
1 tbsp Olive Oil (use spritzer if possible)
Salt and pepper to taste

Peel eggplant and cut up into 1/2 inch cubes
Place cubed eggplant in a colander or strainer then sprinkle with salt and let sit for approximately 10 min. Eggplant tends to be bitter and by "sweating" the eggplant with salt it pulls some of the bitterness out. After 10 min. thoroughly rinse the eggplant with water.

While eggplant is sweating, slice portabella mushrooms and mince garlic.
