~17 Mission whole wheat tortillas

Here is how you make The Whole Enchilada:

Makes 17 enchiladas-I have to use 1 regular-sized rectangular baking dish, 1 mini-rectangular dish, and 1 square dish to fit them all!*****************************************************Filling:1- Place chicken breast on bottom of crockpot2- Pour 1 cup salsa over chicken3- Pour .25 cup enchilada sauce over top4- Cook on LOW for 6-8 hours5- After cooktime, turn off heat and stir until chicken is shredded well.6- Stir in .25 cup shredded cheese*************************************************PREHEAT OVEN TO 350 F1- Spread .25 c salsa into each baking dish you're using (prevents sticking)2- Scoop about .25 c crockpot-mix into each tortilla and roll up burrito style (tuck in all sides).3-Arrange side by side in baking dishes4- Pour .75 c enchilada sauce over top in EACH baking dish.5- Sprinkle .25 c cheese on top of that in EACH dish.6- Bake for 20 minutes (may not be able to fit all 3 dishes in oven, I bake the big one first and then the smaller dishes together second.)Number of Servings: 17Recipe submitted by SparkPeople user RENYEL.
