1. heat up olive oil in deep skillet.2. brown onions till clear.3. Add meats and brown till cooked through4. Turn off heat add peppers and cover to let steam5. mix tomato sauce with half of salsa6. coat bottom of baking dish with thin layer of sauce7. warm tortillas in microwave for 1 min.8. combine on serving spoon of meat with half tbs of sauce and half tbs of rice and a pinch of cheese wrap up in one tortilla place seam side down in pan. 9. Repeat till tortillas are all filled. 10. spread leftover sauce on top of enchilada's any leftover meat or rice spread evenly over top spread rest of cheese over top of enchiladas11.
