Here is how you make That's a lotta enchilada:

Brown meat and onion. Add seasoning mix per pkg directions, simmer 15-20 min. Spray baking dish with non-stick spray. Place 1/4 c. meat mixture in center of tortilla, add 1T sour cream, some grated cheese, and a tablespoon of taco sauce; roll tortilla and place in baking dish with seam side down. Once all enchilada's are in the dish, pour canned enchilada sauce over entire dish; top with remaining cheese. Can thinly slice green onions to put on top also.
