16 oz (half a brick) of Velveeta Cheese
3 cans enchilada sauce ( I use Old ElPaso)
1 medium onion (chopped)
3 packages (about 36) corn tortillas


How Do I Make Enchiladas -- Stacked?

Here is how you make Enchiladas -- Stacked:

You will need a good old fashined fry pan -- the kind with the temperature adjustment on the handle. These will be made in four stacks so four corn tortillas should fit side by side in the pan. Brown the beef with the onions, drain fat, and add 3/4 can of sauce. Have ready * about 1/2 cup oil in a small pan over medium heat with tongs* cooked beef with a spoon* a can of sauce with a spoon* cheese with a cheese cutterFry a tortilla in the oil until almost firm flipping a couple of times and holding in the oil with the tongs. Transfer to the pan. Repeat until there are four tortillas in the pan -- preferably not touching. Cover each tortilla with a tablespoon of beef mixture, a slice of cheese (about 1/8 of an inch), and a tablespoon of sauce. Repeat this process until you run out of one of the ingredients -- with practice you will be able to adjust amounts and all all ingredients will be used. I usually have a bit of sauce and a bit of cheese left over at the end. I just put the cheese on the top and pour the sauce over the stacks. Cook at about 250-300 for 30 to 60 minutes. Cheese will melting from inbetween the tortillas when they are done. I consider 1/2 of a stack 1 serving. My son considers 1 stack a serving.
