What Are The Ingredients For Lisa's Enchiladas Recipe?The ingredients for Lisa's Enchiladas are: 8 Large Whole Wheat Tortillas1 lb- 1-1/2lbs Chicken breast- no skin 1 Large sweet onion- chopped 1 large bell pepper- Chopped 1 C salsa 1 Can Old Elpaso Enchilada Sauce Cheddar cheese How Do I Make Lisa's Enchiladas?Here is how you make Lisa's Enchiladas: In pot of boiling water, boil chicken until no longer pink. Remove from water. Shred using 2 forks.Once shredded set aside.In a sautee pan heat a tablespoon oiladd chopped onion and pepper. Once onion is almost opaque, add chicken and salsastir to mix well.Reduce heat to low. Lay out tortillas, sprinkled with a few tablespoons of cheese. Add two-three tablespoons of chicken mixture. Fold in the left and right side of tortilla. Holding both sides in, use thumbs to start at bottom of tortilla and roll up. Place seam side down into baking dish. Once all tortillas are used, cover with Old Elpaso enchilada sauce. Bake in 350 degree oven for about 20 minutes, Covered with aluminum foil. If there is cheese left over or if you want to add extra cheese to top and bake a few more minutes until cheese melts.
