1 red bell pepper, finely diced

1 4-oz (drained) can mushrooms

How Do I Make Enchiladas?

Here is how you make Enchiladas:

Cook turkey with diced peppers and onion about 10 minutes, until meat is cooked through and veggies are tender.Add everything else up to tortillas, allow to simmer about 5-10 minutes. In an 8x11 baking dish add a thin layer of meat sauce. Divide remaining sauce between 4 tortillas, fold up and put seam side down in baking dish on top of sauce (can save some sauce and pour over top too, if desired).
