Coat an 8X11 baking pan with the olive oil spray. Spread refried beans in bottom of pan then guacamole. Cut tortillas in strips and lay on top of guacamole. Spread salsa ontop of the tortillas. Sprincle a little of the taco seasoning on top of the salsa. Spread onions, peppers, mushrooms and brocoli on top of tortillas. Sprinkle with a little more taco season, lightly coat with olive oil spray, sprinkle reamainder of taco season, or to your taste, and spray one more light coat of olive oil on top.Bake untill onions and peppers begin to get tender, usualy about 30 minutes, then take the dish out and spread the veggie shredds on top.
