Heat olive oil in largish skillet. Saute polska kielbasa and veggies, remove from pan. Beat eggs and milk together and add salt and pepper if desired. Melt coconut oil in pan, add veggie and meat mixture and fresh herbs, if desired. . Pour egg mixture over veggies and meat. Cover and cook on medium for about 5 minutes.
