In a small skillet with a tight-fitting lid, spray with cooking spray. Cook onion and pepper over medium heat, stirring occasionally, until tender. Beat egg substitute, milk, chili powder and oregan until well blended. Pour over onion and bell pepper. Stir in corn. Cover and cook over medium-low heat for 7 to 9 minutes, or until egg substitute is set around the edge and light brown on the bottom. Sprinkle with cheese. Cut into wedges and serve with salsa. Makes 2 to 3 servings. A big spinach salad tossed with balsamic vinaigrette dressing and whole grain rolls are suggested accompaniments.
