1 teaspoon Greek seasoning, divided
1 tbs extra-virgin olive oil
1 tbs minced garlic
3/4 cup pre-diced onions
1 (14 oz) can quartered artichoke hearts (drained)
1 (14.5 oz) can diced tomatoes (drained)
1/4 cup white wine
1 cucumber (rinsed)
1 pint cherry tomatoes
1/2 cup Greek salad dressing
1/2 tsp Greek seasoning
1/4 tsp kosher salt

Here is how you make Greek Fish wih Cucumbers and Tomatoes:

Remove ends of cucumber and peel if desired. Cut cucumber in half lengthwise and then slice thinly and place in medium bowl.Cut cherry tomatoes lengthwise into quarters, add to cucumbers. Stir in remaining ingredients until evenly coated. Let stand 10-15 minutes to blend flavors. Set aside to make fish. Stir before serving.Preheat large saute pan on medium-high for 2-3 minutes. Season both sides of fish with pepper and 1/2 tsp of the Green seasoning.Place oil in pan and swirl to coat. Add garlic and onions and cook for 1-2 minutes stirring once until onions are slightly softened.Add fish fillets. Top with remaining ingredients including the remaining 1/2 tsp of Greek seasoning.Cover and cook 8-10 minutes stirring vegetables once or until internal temperature reaches 145 degrees.
