1 Tbsp Spicy or Hot Mustard
1/2 tsp Minced Garlic
1/2 tsp Sesame oil
1/4 tsp Crushed Red Pepper Flakes
1/2 tsp minced ginger
1/2 Cup Daikon Radish
8 oz Can Water Chestnuts (drained)
1/2 Cup Button Mushrooms
1 Tbsp Extra Virgin Olive Oil
16 oz boneless skinless chicken breast
12 (about) Butterhead lettuce leaves


How Do I Make Grilled Lettuce Wraps?

Here is how you make Grilled Lettuce Wraps:

Instructions:Preheat grill to medium/medium high heat (for my grill this is somewhere between 450-500).Clean Butterhead Lettuce leaves (I use around 2-3 leaves per chicken breast, but this would depend on the leaf size and personal preference), pat dry, and place back in fried until ready to use.Mince: 1/2 Cup Daikon Radish8 oz Can Water Chestnuts (drained)1/2 Cup Button Mushrooms Cut chicken into 4 oz portions and pound into uniform thickness as necessary (will help cook evenly).Mix Marinade Ingredients together in bowl:Marinade Ingredients:1/4 Cup Boiling Water1/4 Cup Brown Sugar (packed)3 Tbsp Light Soy Sauce3 Tbsp Ketchup2 Tbsp Apple Cidar Vinegar1 Tbsp Lemon Juice1 Tbsp Spicy or Hot Mustard1/2 tsp Minced Garlic 1/2 tsp Sesame oil1/4 tsp Crushed Red Pepper Flakes1/2 tsp minced ginger Mix Marinade Ingredients together and place chicken in bowl or plastic bag with 1/3 of marinade and coat well. Place chicken on grill (over direct heat), and cook for about 6 minutes on each side (or until the internal temp reaches 165F) Allow chicken to rest for about 5 minutes then either cut into chunks or mince as desired. Place 1 Tbsp Extra Virgin Olive Oil in a Pan and, once hot, place minced Daikon, mushrooms & water chestnuts into pan and cook for about 3-5 minutes or until to preferred doneness.If you are serving this family style you can mix the minced items, chopped/minced chicken, and remaining marinade in a pan prior to serving. If you are pre-portioning I place the chicken, 1/4 of the minced mixture and 1/4 the remaining marinade into separate containers and then mix well to ensure even distribution of ingredients. Serve on Butterhead lettuce. If you are pre-portioning for a later date do not add lettuce to mix.
