3 large Egg, fresh, whole, raw
1.5 oz Cheddar Cheese
1 tbsp Cumin seed
.5 tbsp Chili powder
1 tsp Salt


How Do I Make Red Huevos?

Here is how you make Red Huevos:

Warm olive oil in large saute pan. Add diced onion to pan and cook over medium heat until onions are translucent. Add chopped garlic, diced green chili, chopped jalapeno, and diced bell pepper and saute for four minutes. Add cumin, chili powder, salt and tomatoes and mix. Cover and cook over low-medium for 10-15 minutes. Use wooden spoon to make three indentations in the tomato mixture and place one egg in each. Cover and monitor closely. Cook until egg is soft boiled. Approx five minutes. Sprinkle cheese atop egg and cover again until cheese is melted. While egg is cooking warm tortillas gently. When cheese is melted, spoon one egg with tomato mixture over each tortilla. Serve hot.
