1 zucchini (cut into pieces)
1 green bell pepper (cut into pieces)
4 stalks of celery
2 c mushrooms (sliced)
3 cloves of garlic (pressed or minced)
1 can of diced tomatoes with chiles (Rotel)
1 can of diced tomatoes with chiles - hot (Rotel)
5 cups of chicken broth or bullion
5 cups of instant white or brown rice
1/4 tsp cumin
1/4 tsp allspice
1 tsp thyme
4 bay leaves
1 tsp cajun or creole seasoning
1/4 tsp of cayenne pepper (optional - for extra kick)
salt & pepper to taste
1 tsp Extra Virgin Olive Oil (or subst. cooking spray)


How Do I Make Christian's Jambalaya?

Here is how you make Christian's Jambalaya:

Heat a large skillet with the Extra Virgin Olive Oil or cooking spray. Add chicken, sausage, onions, bell pepper and 1 clove of garlic. Cook through. Meanwhile, begin a stockpot over medium heat. Add tomatoes, spices, rest of the cloves of garlic, and broth. Add all vegetables to the stockpot. After the chicken and sausage are finished cooking, add entire contents of skillet into the stockpot, including any liquids. Bring to a boil and reduce heat to simmer until veggies are crisp-tender. Add rice 1 cup at a time and stir after each. Continue to simmer over low heat until rice is tender. Add shrimp at the end of cooking and allow to heat through.
