Modified this recipe from one I got off of a Weight Watchers message board several years ago. The original recipe called for green and yellow peppers to be sauteed with the Canadian bacon, but our household is not a fan of peppers, so I leave them out. What Are The Ingredients For Jenny's Jambalaya Recipe?The ingredients for Jenny's Jambalaya are: 2 tsp olive oil6 slices Canadian bacon, diced 1 small onion, chopped 2 garlic cloves, crushed 2 TBS Cajun seasoning, divided 1 6oz package cooked, ready to eat, chicken cuts 2 links turkey smoked sausage, sliced 1 can no salt added diced tomatoes 1 cup unprepared instant brown rice 3 cups chicken broth 1 package frozen medium-sized shrimp How Do I Make Jenny's Jambalaya?Here is how you make Jenny's Jambalaya: Heat oil in a large boiling pot.Add Canadian bacon, onions, garlic, and 1 TBS of the Cajun seasoning. Saute until onions are soft and bacon is browned, about 5 minutes.Add chicken, smoked sausage, tomatoes, and brown rice. Stir and let cook until the tomatoes begin to boil, about 5 minutes.Add chicken broth. Bring to a boil, then cover, reduce heat and simmer for 10 minutes.Remove cover. Add shrimp. Bring back to a boil.
