Add olive oil to medium dutch oven over medium high heat. Brown chicken and remove from pan. Add celery, and onion to pan and cook until softened, about two minutes. Add garlic and cook another two minutes. Add sausage and cook two more minutes. Add rice and cook two more minutes. Add remaining ingredients, reserving shrimp and Lobster. Return chicken to pan. Cover and bake for 2 hours at 350 degrees. Stir and add shrimp and Lobster. Cook for additional 15 minutes, or until shrimp are cooked.
