I often like to start with a boxed mix as a base for my own concoctions. I like to jazz things up a bit... plus I find it useful to put even simple things like this through the calculator so I can have them for my nutrition tracker.Add 2.5 cups water to pan and bring to boil. Stir in Zatarain's mix, can of chicken (drained), can of light red kidney beans (drained and rinsed), can of tomatoes. Add in a few dashes of cajun seasoning, more or less depending on how spicy you like it. Return mixture to a boil, cover, reduce heat and simmer for 20-25 minutes until almost all liquid is absorbed and rice is cooked.Remove from heat and let set for 5 minutes or so uncovered.
