2Tbsp olive oil
2 C white onion, chopped
2 C green bell pepper, chopped
2 C celery, sliced
6 cloves garlic, minced
2 chicken breast, boneless/skinless, cut into 1/2" cubes
4 8" links smoked turkey sausage, cut in half, sliced into discs
3 C fresh tomatoes, diced
2 1/2 C chicken stock
2 tsp ground thyme
1/2 tsp oregano
1 tsp parsley
3/4 tsp cayenne
1 1/2 tsp salt
1 tsp ground black pepper
6 cups cooked white rice


How Do I Make Rob's Jambalaya?

Here is how you make Rob's Jambalaya:

- heat oil in large saute/fry pan.- toss in chicken peices, and cook on med for ~ 20 minutes, until chicken is browned on all sides.- remove chicke, place to side.- add in onion, bell pepper, celery, garlic.- sweat until onion and celery become translucent.- add in sausage, and cook for additional 10 minutes.- add chicken back in, along with chicken stock, thyme, oregano, parsley, cayenne, salt & pepper.- cover and simmer on med/low for 25 minutes, stirring ocassionally.- add in tomatoes, and stir, cooking for additional 5 minutes, until tomatoes are cooked.- serve hot over cooked rice.Serving Size: makes a very large pot - will feed 10 - 12 easyNumber of Servings: 12Recipe submitted by SparkPeople user ROBLARSEN.
