Here is how you make Ruby's Jambalaya:

Fillet 4 chicken breast, season and broil at 475 for 10 minutes. Flip the chicken over after five minutes. Remove, cool, dice, and set aside. In a large pot, saute diced onion, diced green peppers, and sliced carrots. Cook until peppers are tender, 5 minutes. Add chicken stock, tomatoes, and all spices, Bring to a boil and add rice.
