The ingredients for Beckie's Jambalya are:

2 cups white rice
1 chicken breast (boneless, skinless)
1 cup frozen shrimp
1/2 cup diced tomato
1/2 diced green bell pepper
1/2 diced red bell pepper
2 tbsp extra virgin olive oil
1 tbsp cayenne pepper
1 tbsp crushed cilantro


How Do I Make Beckie's Jambalya?

Here is how you make Beckie's Jambalya:

Boil the 2 cups of rice first and put aside. Coat a large skillet with the olive oil and add diced chicken, shrimp, diced red pepper, diced green pepper, tomato, and rice. Cook on medium heat for about 10 minutes and add cayenne pepper and cilantro. *You may also add hot sauce and cajun seasoning to taste, depending on how spicy you would like to make the recipe.
