The ingredients for Katey's Kabobs are:

3 Chicken breasts (cut into bite-sized chunks)
3 Summer Squash (cut into bite-sized chunks; do this for all of the vegetables)
1 Zucchini
1 red bell pepper
1 green bell pepper
1 vidalia onion
10 little new potatoes
2 stalks of Celery
1/2 cup Kraft Lite Zesty Italian Dressing (for marinade)


How Do I Make Katey's Kabobs?

Here is how you make Katey's Kabobs:

Cut the chicken into bite-sized pieces and put into ziploc bag. Pour about 1/4 cup of Lite Zesty Italian over the chicken and seal the bag. Let chicken marinate for about an hour (more or less depending on your schedule). Cut up all of the vegetables into bite-sized pieces and put into large bowl. Coat them with about 1/4 cup of the Lite Zesty Italian dressing and stir them all together to get them evenly coated. Using large metal skewers, thread vegetables and chicken in any order you'd like and place in a baking dish. Bake in a 425* oven for about 25 minutes. Take out of the over and cover the dish with tinfoil and put back into over for about 20 minutes. This way everything will get cooked and by covering with tinfoil, it will keep it from burning.This recipe made about 10 large skewers with about 3 cups of vegetables left over.
