1/2 Red Bell Pepper
1/2 medium or 1 small red onion
1 small (approx. 6 inches) zucchini or yellow squash
12 Grape Tomatos (or use 2 medium ripe Roma tomatos if you don't have)

Whisk together olive oil, garlic, lemon juice oregano, salt & pepper to make marinadeCut timmed pork loin into small chunks, 3/4" big. Pour marinade over pork pieces in a zipper lock bag and marinate refrigerated for 1 hour, and no more than 2 hours - don't over-marinate. If you substitute chicken or Shrimp, marinate for no more than 30 minutesCut peppers into pieces around 3/4" big. Slice the zucchini into 1/2" thick slicesCut onion and separate into indivudial pieces aound 3/4 inches square. Preheat broiler or grillToss the veg into the marinade so they're well-coated then dump everything into a bowl so you can make the skewers. Thread into skewers, alternating the veg pieces and grape tomatoes with the meat in whatever pattern you prefer. I usually put a piece of onion with every piece of veg or meat to get decent onion flavor throughout.If broiling, broil 3 inches from flame and if you have high/low setting on broiler, set to Low.. Broil for 5 minutes, then turn over and broil another 5 minutes - check for done - meat should be somewhat browned and when you cut into a piece, it should be white inside with virtually no pink to it. If grilling, cook over medium setting or equivalent for coals.
