Here is how you make Healthy Mexican Lasagna:

Put the turkey in a pan over medium heat. As it starts to brown, add the taco seasoning, onion, and green peppers and stir. While the turkey mixture is cooking, use a mandolin or knife to shave thin slices of zucchiniWhen the turkey is fully cooked, add in the tomatoes and black beans, combining well. Cook until everything is heated through. Spray your pan with non-stick cooking spray. Put town a layer of zucchini slices, the top with turkey mixture. Repeat until you have used all of your turkey mixture. Top with zucchini. Bake at 350 degrees for 20-30 minutes or until zucchini is tender.
