The reason you're boiling 2 breasts is because 1. It's easier than portioning out 8oz of raw chicken and 2. It's how much you need in order to make good stock.So you put the breasts in a saucepan (after cleaning them thoroughly) and add enough water to cover them with about an inch or so of water. Add the lemon juice and zest of one lemon to the water, as well as enough salt and pepper to taste. I like to add garlic lemon pepper too, but that's just because I like things extra lemony. Bring the breasts to a boil and let cook for about 20 minutes - until the liquid gets to be a rich golden color.Remove the breasts and let them cool. Strain the stock and measure out 1.5 cups of it. Put the 1.5 cups of stock back into the saucepan and add 1 cup of rice.Bring rice and stock to a boil, then cover until the rice has absorbed all the stock. Fluff with fork.By now the chicken should be cooled. Shred it with a fork.
