3-4 Tbsps wheat germ

How Do I Make Lentil Cutlets?

Here is how you make Lentil Cutlets:

Cook brown rice according to package instructions being careful not to fluff while rice is steaming so rice does not become gooey.While rice is steaming, cook lentils in separate smaller pot with a pinch off a cube of Knorr veggie bouillon for flavor. (2 cups water to 1 cup dry lentils) Bring lentils and water to a boil then cover and simmer for about 30 minutes or until tender.While rice and lentils are cooking, take the 3 slices of whole wheat bread and place them in the oven on very low heat (200�F) to dry them out for about 20-30 minutes.Let everything cool.Place now stale bread in large mixing bowl and pulverize into crumbs using either or both fingers and pestle. Add eggs and spices. Then add all of the rice and lentils and mix together with large spoon.Place the baking mix in a one bowl with the wheat germ. Place the egg substitute in the other bowl.Form 10 equal-sized patties from the lentil-rice mixture. Pat with a little of the egg substitute and then carefully coat as evenly as possible with the baking mix. Place the patties on wax paper and let firm in refrigerator while preparing whole wheat pasta, green beans and tomato sauce.While pasta, sauce, and beans are cooking, add a few tablespoons of oil to a small frypan (medium heat) and cook patties two or three at a time until crispy.
