The ingredients for Rotel Macaroni are:

1.5 lbs. ground beef (80/20)
4 cups elbow macaroni (or preferred dry pasta)
2 small cans Rotel Original Diced Tomatoes & Green Chilies
2 medium cans diced tomatoes
1 chopped white onion
2 tsp cumin
1/2 tsp salt
1/4 black pepper
water (if necessary)


How Do I Make Rotel Macaroni?

Here is how you make Rotel Macaroni:

Brown the ground beef in pan deeper than a skillet. Remember you're going to be adding a lot liquid of ingredients, enough to float the pasta to cook. DRAIN the grease from the browned ground beef (if you rinse it through a collander, you rinse away more fat!). Cook the onions to your desired doneness. Add the cumin, black pepper and salt. Add your canned ingredients. Add pasta. If the liquid does not cover the pasta enough, add some water so that the pasta is just barely emmersed. You can cook this uncovered or with a lid propped not totally covering the pot. Bring this all to a boil and then kick it back to a hi-simmer. Allow the pasta to cook to your preferred state of doneness. Taste to see if you need more of any spice.This is great with a side salad with a red wine vinegar and oil dressing (especially baby spinach). If you are NOT watching your weight.....it's positively sinfully delicious to serve up a bowl or plate and sprinkle the top with shredded mild cheddar cheese.
