This can also be Mexican meat loaf by omitting sage, and substituting 2/3 c milk and 1/3 c chunky salsa for the 1 c milk. Add 1/2 c reduced fat Colby-Jack cheese and one 4 oz can of Ortega chiles. Mix all ingredients except for ketchup and bbq sauce. Spread into a loaf pan, or make individual servings (perfect for little kids!) by filling in a cupcake tin. Spread ketchup/bbq sauce blend on top, if desired. Bake for 1 hr to 1 hr 15 minutes, or until meat thermometer reads 165 and juices run clear. Drain meat loaf.
