This moist & delicious is high in protein and makes 2 loaf pans (16 servings), so there will be plenty of leftovers. It can easily be frozen and reheated.Note that I usually use equal parts bread crumbs & parmesan (1 cu each), but I was low on parmesan when I made this, so I increased the breadcrumbs.You can substitute tomato paste or steak sauce for the HP sauce.

1/2 lb Ground beef
1/2 lb Ground pork
1/2 lb Ground veal
3 tbs Olive oil
2 Medium tomatoes, chopped, about 1.5 cu
1 Med Onion, diced, about 1 cup
2 cu Frozen chopped spinach
3 Eggs, beaten
1 cu Shredded Mozarella, part-skim
1 cu Breadcrumbs
14 oz Beef Broth (1 can)
1 cu Grated parmesan
4 tbs Ground Flax seeds
4 tbs Original HP Sauce
4 oz Fat Free Mozarella, sliced

Here is how you make Meat Loaf - Moist and Juicy:

1. Saute vegetables in 2 tbs olive oil or vegetable spray. Add red pepper flakes, basil, thyme & sage to taste. Set aside and let cool.2. Soak breadcrumbs in equal amount of beef broth. 3. In a large bowl, mix meat, then add all of the other ingredients except the sliced mozarella and just half of the HP sauce. Add salt & pepper to taste4. Spray 2 meatloaf pans with vegetable spray. Divide meat mixture into 4 parts. Spread one part evenly on the bottom of each pan. Add 2 slizes of mozarella, then top with the remaining two parts of the meat mixture. 5. Mix remaining beef broth & wine together, and pour half of it over each pan. Use the remaing half to baste while cooking. Cook in pre-heated oven at 350 for 45-50 min.
