The ingredients for Meat Balls - The Best Ever!!! (6 meatballs) are:

2 lbs ground beef (at least 80% lean)
1/4 pound ground pork (can be optional)
1 cup cracker crumbs (I use Premium Saltines)
2 eggs
1 tablespoon dried minced onion
1 to 2 teaspoons chili powder (not necessarily to make it spicy, but to give the meatballs a more savory taste)
1 teaspoon seasoned salt (I used either Morton Season All seasoned salt, or Lowry's)
1 "fist size" Russet or Idaho potato (about 6 oz.) finely shredded with peel (do NOT peel).

Variations:
For authentic Swedish Meatballs leave out the seasoned salt and chili powder. For EACH pound of ground beef use:
1/4 to 1/2 teaspoon of salt
1/4 teaspoon each: nutmeg, allspice, ground black pepper. (Some recipes also call for a little ginger also)

To make a BIG batch of meatballs use:
4 pounds ground beef
1 pound ground pork
2 sleeves of Premium Crackers - 8 oz.- (crushed to crumbs in a blender - do this in parts)
1-1/2 tablespoons dried onion
5 eggs
1 tablespoon chili powder
2 teaspoons seasoned salt
About 16 ozs of Russet (Idaho) potato, finely shredded
This quantity of ingredients will make about 4 to 5 dozen meatballs, depending of course on how big you make them

Here is how you make Meat Balls - The Best Ever!!! (6 meatballs):

Using your hands, mix together all ingredients. Spray a broiler pan with non-stick spray. Form meat mixture into balls and place on broiler pan. Bake in a 350 oven for 20-30 minutes until meatballs are browned on the outside and cooked through on the inside. (Note: If you have a convection oven, using the convection heat works well - you may want to use 325 degrees with the convection setting.)To check for doneness, gently pull a cooked meatball apart with 2 forks and check the inside. If it looks cooked, taste it.These can be baked early in the day and placed in a covered caserole dish with a little water. Warm in a 350 oven for 20-30 minutes before serving--or heat in a skillet on top of the stove with a little water. You can also keep them warm in a slow cooker set on low with a little water.Serving Size:?Using 2 lbs ground beef with a little ground pork makes me about 48 meatballs. Serving size is 6 meatballs.
