4 slices of stale bread (sourdough is good)
2/3 cup milk
3 lbs. ground meat, full fat (beef, bison, venison, elk, lamb, moose)
1/2 - 1 lb. Beef or pork fat (if using lean meat, otherwise skip this)
2 eggs
2 tsp. kosher salt
2 tsp. allspice
1 tsp. caraway seeds
1 tsp. black pepper
1 yellow onion, grated or fine dice
1/4 c. flour
4 tbs. grapeseed oil or butter

Sauce:
4 c. beef or wild game stock
1/2 c. sour cream
1 c. fresh blackberries
kosher salt (as needed)


How Do I Make Nordic Meatballs?

Here is how you make Nordic Meatballs:

Remove crusts from bread, break into pieces, and soak in milk.If using wild game, grind or mince in food processor or by hand and add fat as needed. If using a food processor, mince meat and fat in several batches. Or ask the butcher to grind everything up. Basically, you want ground meat with a high fat content. Combine meat, onion, eggs, salt, allspice, caraway, pepper, and milk-bread mixture. Form into 1"-diameter balls. Gently coat in flour and set aside (reserve flour for sauce). Heat oil or butter in a large pan over medium-high heat (cast-iron is best). Brown meatballs in batches, making sure not to overcrowd. When all meatballs are browned, reduce heat to medium (add oil or butter if needed), add an equal amount of flour:oil to pan, scraping up bits to make a roux. Brown roux until golden. Gradually add stock and whisk roux until well combined and no lumps remain. Add blackberries and simmer until berries fall apart or mash them up (about 5-10 minutes). Strain liquid to remove seeds (press seeds against side of strainer) and return liquid to pan. By this point, the sauce should be somewhat thick - you want it thinner than gravy; slightly thinner than bechamel. Add water if too thick or continue to reduce if too thin. Add meatballs, cover, and cook for 10 minutes over medium-low heat. Cook for another 10 minutes over very low heat. Add sour cream and cook through (2-3 minutes). Serve with potatoes.
