1 cup crushed Saltine Crackers
1/2 cup chopped onion
1/2 cup BBQ Sauce
1 can diced tomatoes

How Do I Make Buffalo meatloaf?

Here is how you make Buffalo meatloaf:

Mix ground buffalo with other ingrediants reserving 1/2 of the tomatoes and 1/2 of the BBQ sauce. Put in loaf pan or I like to put mine in a cake pan lined with foil and loosely wrap the foil around the loaf and cook at 375 for 1 hour. Remove, open the foil up, check to make sure it is done, then mix remainder of tomatoes and BBQ sauce together and spread on top and put back in oven for 10 minutes or until top is bubbly. You can leave BBQ sauce out and you can add green peppers to the recipe for a more traditional Meatloaf. Buffalo is very low fat so you have to add fluid to get it to stay in a loaf.
