Dice carrots, onions, and celery. Heat in skillet for few minutes with EVOO, just enough to make them sweat. Remove from heat to cool. Take thawed ground beef and add tomato paste, garlic, bread crumbs, egg, salt, pepper, and cooled veggies. Mix well. Shape meatloaves into patties. Should yield about 6-7 patties.
