Here is how you make Span-o-ko- meatloaf:

Pre-heat oven to 400. Cut each tortilla in 8ths. Plac eon cookie sheet and bake until crisp (I did this in advance)Process these corn chips in food processor. Mix beef, oats, egg, salsa (reserve some for top) and any type seasoning you like. Add corn chip crumbs. Mix thoroughly with hands.Wilt spinach in frying pan.In meatloaf pan, take 2/3 mixture, place in pan, create a well in center. Layer feta, spinach, feta. Cover with remaining meat mixture, top with salsa.
