Begin by cooking quinoa in one cup of water for 15 minutes, set aside in sauce pan; keep covered. In small bowl, mix all seasoning together, set aside. In a large bowl, place ground beef and gently break up and spread out in bowl, sprinkle with seasonings. Rough chop all veggies. In food processor, add veggies and pulse to process into a fine chop. Do not puree. Add veggies to meat. With a fork, rake quinoa into mixture. Now gently fold all ingredients together. Be careful not to squeeze the meat, keep it light and fluffy. When reasonably combined, add egg and continue gently folding. Put into individual size loaf pans and bake for 10 minutes. Mix glaze and add 1 tbsp. per loaf. Put back into the oven for the 35 minutes. Remove from the oven, tent for 10 minutes and serve with the remainder of the glaze on the side. Tip: I cut parchment squares and place into the pan and then add the meat loaf filling.
