1/2 LB. Ground Beef
1/2 can Lite Spam
1/2 LB. Ground Turkey
1/2 Cup Plain Oatmeal (quick cooking)
1 Cup Seasoned Bread Crumbs
1/2 Cup Carrots
1/2 Cup Onions
1/4 Celery
1/2 Cup Diced Tomatoes (W/ Italian Seasonings)
3 TBSP Worchestire Sauce
1 tsp Garlic Powder
1 tsp Onion Powder
2 tsp Italian Seasoning

How Do I Make Cassie's Meatloaf?

Here is how you make Cassie's Meatloaf:

Grind Spam in food processor until it has a finely ground texture. Mix meats together thoroughly. Finely grind (not puree): carrots, onions, celery, tomatoes , and mushrooms in food processor, seperately. Add each to ground meat. Mix garlic powder, onion powder, italian seasoning, oatmeal, and bread crumbs together. Whisk eggs and worchestire sauce together. Combine eggs, meat, and dry ingredients together a little at a time (using your hands makes this a lot easier!) until all ingredients are blended. Cover mixture and place in the refridgerator for 30 minutes to an hour. Preheat oven to 375Mixture should firm up and be very easy to form. Form mixture into one or two logs (really your preference in size and shape. I like two smaller logs) Cover a baking sheet with foil (easy clean up) and spray with non-stick cooking spray. Place log/or logs on baking sheet. As an option you may fill the bottom with 1/4 inch of water to help maintain moisture but you don't want too much or your loaf will get mushy. Glaze log with ketchup mixture, if you prefer, and bake for 1 hour or until quick read thermometer reads 160 degrees. Remove from oven and allow to rest for 5-10 minutes before serving.
