Here is how you make Provision medley:

Boil A mix of ground provision (Starchy roots/Vegetable staples) noting that smaller pieces cook faster so should be removed earlier if a toothpick enters easily and leaves cleanly. Peel provision and cut up in bite sized pieces or no larger than 2" cubes.Alternative: Peel and cut ground provision into small pieces no more than 2" cubes. Cover with water and boil down till water almost gone and pieces are cooked throughout. (Use toothpick... should slide in easily with minimal resistance). If more water is needed to complete cooking add boiling hot water and allow to "dry down". This step could also be done in a slow cooker.Once the provision is boiled and peeled, saute chopped onion, minced garlic and fresh herbs to taste in olive oil. (I like to soak minced garlic and fresh herbs in olive oil and scoop some out when ready to cook just about anything). Once the onion looks cooked (transparent), add the provision and stir. Turn off heat.
