This was something I threw together one day when I did not really feel like cooking dinner. I made this dish from left overs from the refrigerator. Each time I make it, it comes out a little differently as the ingredients and portions change each time.

The ingredients for Tex-Mex Skillet Meal are:

12 oz lean ground meat, cooked
1 cup canned sweet corn
1 1/2 cup ranch-style beans or black beans
1 1/2 cup brown rice, cooked
1/4 cup chopped onion
1/2 packet of Taco seasoning mix( I use one with low sodium)
olive oil
2 Tbls water


How Do I Make Tex-Mex Skillet Meal?

Here is how you make Tex-Mex Skillet Meal:

In skillet, Cook onion in olive oil until onion starts becoming translucent. Add ground beef and Taco seasoning mix. Stir until meat is well coated with mix. Add corn, beans, and 2 tbls water. Stir until well blended. Cover with lid and cook on low heat for about 15 mins or until thoroughly heated. Spoon into bowls and top with cheese. I like to serve with baked tortilla crisp.
