Here is how you make Mexican cassoulet:

Add 2 tbsp olive oil to dutch oven. Fry sausage links in olive oil. Remove from pan.Brown chicken legs in pan. Remove. Add onions and bacon and fry in oil. When onions and bacon are cooked, add chicken and sausage back to pan.Add tomatoes, leek, carrot and chicken stock and bring to a boil. Reduce heat and simmer 20 minutes. Add 2 tbsp oregano.
