Here is how you make Mexican Hotdish:

Preheat oven to 400 degrees, lightly coat 9x13 pan with cooking spray. Heat oil in large skillet over med/hi heat. Add turkey and onion, cook. Stir often and add beans, enchilada sauce, spices and corn. Heat thru about 4 minutes.Scatter half the tortilla pieces in the pan. Top with half the bean mixture then half the cheese. Repeat one more time. Cover with foil. Bake the casserole for 15 minutes.
