Place pecans in blender, pulse until coarsely ground. Add eggs, onion, garlic, soy sauce, sriracha and spices, and blend until onion is sufficiently liquified. Add shredded slices of bread, and pulse a few times until mixed in. Remove to bowl and add the quick cooking oatmeal and cottage cheese. Mix and let sit in refrigerator for 30 minutes for oatmeal to soak up most of the moisture. Preheat griddle to medium heat and spray with evoo or other cooking spray. Scoop burger mix onto griddle, flatten slightly and cook until lightly browned on each side.
