1 chopped onion
3 cloves chopped garlic
1 tsp olive oil
1lb organic okra
2 ears fresh corn
4 organic tomatoes
1 small can tomato paste
1 tbsp red curry paste
2 cups vegetable broth
pinch of rosemary
red pepper flakes to taste
salt and pepper to taste

Here is how you make Okra Gumbo:

-Sautee onions and garlic in the olive oil-Stir in red curry and tomato paste-Add vegetable broth-Season with salt and pepper. Add oregano and red pepper flakes also. (You can add the salt and pepper to the onion/garlic mix if you want). Simmer for about 5 minutes.-Add okra and tomatoes. -Remove the corn from the cob. Add the corn last (it will cook the quickest and I like it a little crunchy).-Simmer for another 15 minutes and serve over rice.Serving Size:?6, 1 cup servings
