Coarse Salt
1 lb GF elbow rice pasta
1 T olive oil
8 slices bacon, coarsely chopped
2 large leeks, sliced minus dark tops and roots
black pepper
3 T unsalted butter
3 T GF All Purpose Flour
1/2 t cayenne pepper
1 t paprika
3 c whole milk
1 c GF chicken stock or broth
3 1/2 c Gruyere cheese (we used apple smoked)
1 T Dijon mustard
1 pint cherry tomatoes, halved
Optional: 3/4 c plain tortilla crumbs


How Do I Make GF BLT Pasta Bake?

Here is how you make GF BLT Pasta Bake:

Makes 8 1/2 cup servings.Cook pasta according to package directions.While pasta cooks, heat large skillet over medium heat. Add olive oil and bacon. Cook to crisp. After leeks are sliced, rinsed, patted dry & drained, add to the pan with the bacon. Season with salt & pepper to taste. Cook about 3-4 min until tender.For cheese sauce, heat a medium sauce pan over medium heat. Add the butter and melt, then add the flour, cayenne, and paprika. Whisk together over heat until the roux bubbles. cook for 1 min more. Whisk in the milk and stock. Raise the heat a little. Bring the sauce to a quick boil and simmer to thicken, about 5 min. Remove from heat and whisk in 3 cups of the cheese and mustard. Set aside.Add the cherry tomatoes to the leeks. Cook 2 min. Remove from heat.Preheat the broiler. Drain pasta and return to pasta pot. Combine the leek mixture and the cheese sauce with the pasta in the pasta pot. Season with salt and pepper to taste.Transfer pasta to bakin dish (we used 9 x 9 square baker). Combine remaining cheese with tortilla crumbs (optional). Top the pasta mixture.
